I know this might sound a bit crazy, but cholesterol isn’t only harmless, it’s a vital building block that makes up a large part of your brain. It’s also vital in making Testosterone and Estrogen, Vitamin D, and is used in the cell lining of every cell in your body.

The hypothesis that saturated fat and cholesterol lead to heart disease and the blocking of arteries has never been proven. The Cholesterol Myth by Bowden and Sinatra lays out the absurd series of events and junk science that led to the adoption of this hypothesis as American policy. (Here’s a hint — money and politics were involved.) Your total cholesterol levels are NOT a useful indicator of heart disease risk. There aren’t even really ‘good cholesterol’ and bad cholesterol;’ it’s not as simple as that.

Fat is good for you. Low Fat and Nonfat are labels to avoid at all costs! The removal of fat from processed foods is almost always coupled with the addition of sugar. Drink whole milk. (Raw if legal/possible.) Eat Eggs with the yolk. Don’t cut off the fat — eat it! Avocados and grass fed butter and coconut oil should be staples of your diet. Burning fat as fuel (ketosis) is the ideal for fat loss. You should absolutely be eating fat if you want to lose fat.

That’s not to say all fats are good. We want to remove processed vegetable oils from our diet, while maximizing the saturated fats and Omega 3’s. (Trans Fats are only made by humans in production plants. Anything that is hydrogenated or partially hydrogenated is NOT food, and should be consumed about as often as anti-freeze and for the same reasons.)

Despite no causal link between high cholesterol and heart disease, selling cholesterol lowering drugs is big business. Statin drugs are incredibly dangerous and proven to cause memory loss and sexual dysfunction, and haven’t been proven to reduce heart disease or heart attack risk in any way. But they are a multi-billion dollar industry, with lots of political clout feeding disinformation to doctors. Still, this opinion piece in the New York Times is encouraging!

And that’s why I’m not scared to drink butter all day.
